Straw color with bright reflections. Fine perlage, persistent crown. Bouquet: pleasant notes of toasted bread with a light finish of exotic fruit and a pleasant citrus aftertaste. The taste is fresh and elegant with good aromatic persistence.
VARIETY 100% Pinot Noir.
VINIFICATION soft pressing, with static clarification at 10° C, followed by temperature-controlled fermentation with selected yeasts.
SPARKLING refermentation at low temperatures in the autoclave followed by long aging on the lees: 6 months (Metodo Martinotti Lungo)
BOTTLING ANALYTICAL DATA alcohol 12% total acidity 6 g/l sugar dosage 8/9 g/l pH 3.2.
