OBLIO OLTREPÒ PAVESE METODO CLASSICO PINOT NERO DOCG
White foam, soft and rich; fine and persistent perlage. Intense golden-yellow color with reflections bright. Rich and complex bouquet with hints of minerals, candied fruit, notes of tobacco, and spices. On the palate it is fresh, mineral, saline, great freshness balanced by a great body.
VARIETY
Pinot Noir – Pinot Noir 100%
AREA OF ORIGIN
vineyards located in the middle and upper Valle Versa in Oltrepò Pavese (southwestern Lombardy). Height variable between 200 and 500 m asl.
SOIL
Silty marl with a high presence of active limestone and a good water reserve.
CULTIVATION
vertical shoot positioning vineyards with guyot pruning 4000 plants per hectare.
PRODUCTION AND YIELD OF GRAPES/MUST
100 quintals/hectare and 40 hl/ha (40%).
VINIFICATION
white vinification through the soft and progressive pressing of the grapes. The fermentation with the addition of selected yeasts at 18°C takes place in stainless steel tanks. In the following spring, we assemble the best base wines, coming from the most suitable vineyards to have a balance between structure, freshness, minerality, and aromatic complexity.
TIRAGE
the “tirage” or the second fermentation takes place in the bottle at a controlled temperature of 13-14°C in the our underground cellar.
AGEING
The wine stays in contact with the lees takes place for at least 72 months (6 years) to grow according to the vintage.
DOSAGE AT DISGORGING
no added sugar, only topping up with the same wine. After disgorgement, the sparkling wine stays in the bottle for 12 months before being put up for sale.
