Brut Nature
White foam, soft and rich; fine and persistent perlage. Straw yellow color with golden reflections light. The bouquet is rich in white flowers and fruity with hints of pear and tropical fruit. On the palate, it is fresh and inviting, complex and full of balance.
GRAPE VARIETY
100% Pinot Noir.
SOIL
silty marl with a high presence of active limestone.
CULTIVATION
vertical shoot positioning vineyards with guyot pruning, 4500 plants per hectare located at 150 – 300 m above sea level.
PRODUCTION AND YIELD OF GRAPES/MUST
100 quintals/hectare and 50 hl/ha.
VINIFICATION
the white must is obtained through the soft and progressive pressing of the grapes, with the separation of the various fractions based on the pH and organoleptic characteristics. Fermentation with the addition of selected yeasts takes place in stainless steel tanks at a temperature of 18°C
AGEING
he “tirage” or the second fermentation takes place in the bottle followed by a minimum of 28 months of resting time on the yeasts. After disgorgement, the sparkling wine rests for 3 months in the bottle before release, to favor its maximum aromatic and taste expression.
