Oltrepò Pavese Metodo Classico Pinot Nero docg

appreciated as an aperitif, it’s also recommended throughout a meal. It complements full-flavoured hors d’oeuvres, first courses such as risotto or pasta, dishes featuring fish, light meats and aged cheeses.

VINEYARDS
vineyards are located in the medium and high part of the Versa Valley in Oltrepò Pavese (South-West Lombardy).
The altitude is between 200 and 500 m asl.

GRAPE YIELD AND WINE YIELD
12000 kg/ha e 4800 L/ha (40%).

WINEMAKING
fermentation is carried out without the skins (white making) with soft pressing. The free run juice ferments with selected yeasts in temperature controlled stainless steel tanks at 18°C. In the following spring, the best base wines are blended. They usually come from the best vineyards to have a balance between structure, freshness, minerality and aromatic complexity.
The “tirage” is carried out in the bottle in our underground cellar at controlled temperature of 13–14°C.

AGEING
the ageing lasts at least 72 months (6 years). It can last longer depending on the vintage.
