BONARDA DELL’OLTREPO’ PAVESE DOC

Intense purple-red color with violet reflections.Typical bouquet of black cherry and blackberry that it then opens up to hints of flowers, vegetables, and spices typical of the vine and not deriving from the wood.
On the palate, the tannins of the wine are well present and integrated. It has a good structure, and is lively and inviting.

VARIETY
Croatina 95% and a small percentage of Uva rara and Ughetta (5%).

ORIGIN
the Sabion vineyard is located in the municipality of Montù Beccaria.

EXPOSURE
south/east.

ALTITUDE
150 m asl.

SOIL
sandy with a clayey matrix, of medium fertility.

CULTIVATION
vertical shoot positioning – guyot pruning.

PLANT DENSITY
4000 plants/hectare.

VINIFICATION
Maceration in contact with the skins for 9 days and fermentation at a temperature of 25°C in stainless steel tank. The second fermentation takes place in the autoclave at a relatively low temperature using a small percentage of the same sweet wine thus obtaining a Bonarda rich in fruity aromas and a remarkable fragrance.
