Appearance: its mousse is exuberant and its perlage is made up of extremely small, densely-packed and persistent bubbles. Colour: golden yellow colour. Bouquet: Aromatic and intense; fragrance of white flowers, exotic fruits, toasted hazelnuts with nuances of honey and crusty bread. Palate: It’s fresh, refined and very harmonious with a velvety body of great elegance.

WINEMAKING
fermentation is carried out without the skins (white making) with soft pressing. The free run juice ferments with selected yeasts in temperature controlled stainless steel tanks at 18°C.
AGEING
“Tirage” or second fermentation takes place in bottle followed by 18 months ageing on the yeast lees; after disgourging, it is given another three further months of bottle ageing before release.
