Bonarda dell'Oltrepò Pavese doc

Deep ruby color with violet highlights. Bouquet: fruity hints of wild berries and ripe cherry and then offers flowery suggestions of violet tipical of the varietal. Taste: well structured, dry, slightly tannic, fizzy and inviting.

GRAPE VARIETY
Croatina (95%) , Uva Rara and Ughetta (5%).

VINEYARD
located in Montù Beccaria at 200 m s.l.m., est facing.

SOIL
sandy with percentage of clay.

VITICULTURE
vertical shoot positioned, guyot pruning with low yield (60-70 hl/ha).

WINEMAKING
maceration with the skin, and fermentation at a temperature of 25° C. Second fermentation of the residual sugars in autoclaves at controlled temperature (16-18°C) using sweet must to get nice and fruity aromas.
